Kefir VS Yogurt

Both kefir and yogurt are cultured milk products but they contain different types of beneficial bacteria. 

Yogurt contains transient beneficial bacteria that keep the digestive system clean and provide food for the friendly bacteria that reside there. But kefir can actually colonize the intestinal tract, a feat that yogurt cannot match.

Kefir contains several major strains of friendly bacteria not commonly found in yogurt, Lactobacillus Caucasus, Leuconostoc, Acetobacter species, and Streptococcus species.

It also contains beneficial yeasts, such as Saccharomyces kefir and Torula kefir, which dominate, control and eliminate destructive pathogenic yeasts in the body. 

Kefir’s active yeast and bacteria provide more nutritive value than yogurt by helping digest the foods that you eat and by keeping the colon environment clean and healthy. Because the curd size of kefir is smaller than yogurt, it is also easier to digest, which makes it a particularly excellent, nutritious food for babies, the elderly and people experiencing chronic fatigue and digestive disorders.

What is Kefir

Kefir is a fermented milk drink made with kefir grains. It is prepared by inoculating cow, goat, or sheep's milk with kefir grains.

Kefir grains will successfully ferment the milk from most mammals, and will continue to grow in such milk. Typical milks used include cow, goat, and sheep, each with varying organoleptic and nutritional qualities. Raw milk has been traditionally used.

In addition, kefir grains will ferment milk substitutes such as soy milk, rice milk, and coconut milk, as well as other sugary liquids including fruit juice, coconut water, beer wort and ginger beer. However, the kefir grains may cease growing if the medium used does not contain all the growth factors required by the bacteria.

Milk sugar is, however, not essential for the synthesis of the polysaccharide that makes up the grains (kefiran), and studies have demonstrated that rice hydrolysate is a suitable alternative medium. Additionally, it has been shown that kefir grains will reproduce when fermenting soy milk, although they will change in appearance and size due to the differing proteins available to them.

Best way to drink goat milk

Drink in Cold :
1. Unfreeze goat milk.
2. To unfreeze, suggest pour a pot of water and soak the milk for about
10mins until it is melt.
3. Goat milk is ready to be served once in liquid.

Drink in Warm :
1. Unfreeze goat milk and pour it into a cup.
2. To heat, pour some water into a pot, boil it. Off the fire when it's
boil.
3. Soak the cup of goat milk into hot water for about 10-15mins.
4. Goat milk is ready to be served once it is warm.

P/S : Pure and fresh goat milk must keep in freezer for storing.
